Introduction to Coffee--10 points

This class is designed for anyone who is new to the coffee industry or just has an interest in this wonderful drink.  

We take you through the history of coffee, from its origins in Ethiopia to its place today as one of the world’s most consumed beverages and major commodities.  Attendees will go in-depth on understanding the bean, farming and processing methods, best  brewing practices and common drinks consumed worldwide. We also discover a brief history of the machines used to roast and brew this wonderful product.

There is only an online written exam for this class.

Students who pass online written exam and want a certificate will need to submit a $65.00 CAD certificate fee for each class, before SCA will issue certificate. Fee is payable to your AST which will be forwarded to SCA on your behalf.

BREWING SKILLS

FOUNDATIONS

Designed to introduce core brewing skills and equipment to people with no
previous brewing experience. Successful candidates should be able to
grind and brew to the correct recipe to produce great coffee.

There are two tests associated with this class. A practical test on day of class and after successfully passing this an online written exam. 

Students who pass online written exam and want a certificate will need to submit a $65.00 CAD certificate fee before SCA will issue certificate. Fee is payable to your AST which will be forwarded to SCA on your behalf.

Barista Skills Foundations--

This class is designed to give you the basic knowledge and tools required to work behind the bar and prepare you for the Barista Intermediate and Professional courses.

Attendees will receive a general overview of everything from equipment operation to customer service, espresso extraction and drink preparation.  Upon completion, graduates will have a base knowledge of the bar and skills that are immediately relevant and ready to enhance the workforce in any coffee bar operation with a focus on high-level, high-quality execution to the standards and best practices of the Specialty Coffee Association. It will also count 10 points toward your diploma.

There are two tests associated with this class. A practical test on day of class and after successfully passing this an online written exam. 

Students who pass online written exam and want a certificate will need to submit a $65.00 CAD certificate fee before SCA will issue certificate. Fee is payable to your AST which will be forwarded to SCA on your behalf.

GREEN COFFEE SKILLS

FOUNDATIONS

This is an introductory course that covers key concepts surrounding
green coffee from growing the plant, through processing, shipping
and storage to arrival at a roastery.
The course is ideally suited for people new to the coffee industry or
those looking to gain an insight into the broad subject matter of
green coffee. It includes an introduction to the basics of quality
checks, coffee grading, and taste/flavor differences due to
processing or species.

There are two tests associated with this class. A practical test on day of class and after successfully passing this an online written exam.

This class is designed to give you the basic knowledge and tools required in understanding the roasting process and prepare you for the Roasting Intermediate and Professional courses.

Attendees receive detailed instruction on terminology and a general overview of a roasting operation, including equipment usage, safety and maintenance.  Upon completion, graduates will have a base knowledge of coffee roasting techniques and operational requirements that are immediately relevant and ready to enhance the workforce in any roasting operation with a focus on high-level, high-quality execution to the standards and best practices of the Specialty Coffee Association.

There are two tests associated with this class. A practical test on day of class and after successfully passing this an online written exam.

Sensory Skills Foundations

Expose and sensitize student on the notion of specialty vs non-
specialty coffee. Enabling the student to recognize the core of sensory analysis, and explain why and how coffee use it in the coffee industry. Broad focus will be put identifying, describing and discriminating objectively aroma,
taste and body in coffees. Students will be introduced to the SCA
cupping protocol and methodology and reflect on the qualitative
dimension of this evaluation methodology.
